Sweet and Sour Chicken Meatballs

An easy recipe for sweet and sour meatballs. It is a deliciously healthy dish and it's ready in about 45-50 minutes

INGREDIENTS

Meatballs:

  • 1 lb. lean ground Chicken

  • 6 Brenton crackers (crushed)

  • * 2 tsp dried Italian seasoning

  • .5 tsp Salt

  • .5 tsp pepper to taste

Sauce:

  • 1 cup

  • 3 tablespoons apple cider vinegar

  • 3 tablespoons honey or a low carb substitute

  • 3 tablespoons light soy sauce (or use a gluten-free alternative and add salt as needed)

Whole Wheat Rice:

  • 1 cup raw whole wheat rice

  • 2 cups water

INSTRUCTIONS

  1. Preheat oven to 400 degrees F. 

  2. Combine whole wheat rice and water, cook on high, as soon as water begins to boil, reduce heat to low and allow rice to fully absorb water.

  3. Mix the ingredients in a large bowl. Form meatballs, and place in the prepared baking dish. Bake 10 minutes.

  4. While meatballs are baking, whisk together the sauce ingredients in a medium bowl.

  5. Remove the baking dish from the oven. Pour the sauce over the meatballs, spooning sauce over each meatball to make sure they are well-coated. Bake 10 more minutes, uncovered, until meatballs are well browned and sauce is thick and fragrant. Serve on a bed of whole wheat rice, with your choice of steamed vegetables.
