Big Beef Stir-Fry

Beef

  • 12 oz steak, thinly sliced

  • 1 whole carrot, thinly sliced

  • 1 stalk of celery, thinly sliced

  • ½ Spanish onion, thinly sliced

  • Yellow and green beans, roughly chopped

  • ½ head of Broccoli

  • 1 bell pepper (color of your choosing)

  • 1 handful of trail mix or nuts of your choosing

  • Salt and pepper to taste

Rice

1 cup of dried rice (preferably brown or wild)-follow direction on package. If using wild rice, we recommend soaking wild rice over night to help open husk and remove some impurities from the rice as well as shorten cooking time. If you do this remember to re-rinse your rice before cooking.

Sauce

The key thing to remember when making any sauce, is that the sauce is meant to gently coat your food, not drown your food. North Americans have a habit of utilizing too much sauce, and in doing so take away the experience and mouth feel of your food. Also feel free to add herbs of your choosing, just use a little at a time (again we don’t want to overpower the other flavors, instead they should flow together like a well choreographed dance). 

  • ½ cup of low sodium soy sauce

  • 6 Tbsp of honey

  • Salt and pepper to taste

INSTRUCTIONS

Start with cooking rice. While rice is doing it’s thing on the stove (remember to check on rice regularly), you can cut carrots, onion, and celery, place in a bowl together. Cut broccoli into florets, dice pepper, and clean fresh bean (yellow and green) Can also use frozen mix if you’d like. Place broccoli, peppers, and beans in a separate bowl and put to the side for now. 

Once you’ve cleaned your cutting board off from the veg, thinly slice the beef, into desired strips (if you are preparing this in advance, feel free to marinate the beef in the sauce). If beef is ready to cook turn on stove to a high heat with pan on the burner. Once pan is heated take beef strip out of the sauce (if you marinated them) and put beef in pan. Brown beef slightly drain any excess liquid from the pan, and add carrots, celery and onions to beef. Cook those vegetable until onions become translucent (clear). Now you can add the sauce, allow sauce to reduce by half (roughly) than add remaining vegetable to mix and cook until broccoli becomes a very bright and vibrant green color.  

Once everything is cooked and ready to eat place a bed of rice on the plate and spoon the beef and vegetable mix on top and enjoy. If you are meal prepping for another day, spread food on some plate of long pan and allow to cool properly before putting in a sealed container in the fridge.
